BBQ Honey Garlic Chicken Tenderloins with Seasonal Vegetables on Rice
This is such a satisfying rice dish with divine marinade sauce. With meal prep, you can easily create this dish in midweek. For the vegetables, I use what I have got in the fridge. You can easily swap them out for what you have got instead. Your family will thank you for this delicious hearty meal.

Ingredients:
800g chicken tenderloins (chopped) (you can use chicken breast or thigh if prefer)
1 onion (chopped)
3 medium zucchini
2 medium peppers
Bok choi
10 mushrooms (sliced)
Salt and pepper to taste
2 cups rice
3 cups chicken or vegetable stock
Dash of oil

BBQ Honey Garlic Sauce

1/2 cup Soy sauce
1/2 cup BBQ sauce
2 Tbsp crushed garlic
1/3 cup Honey
1 tsp lemon juice
1 Tbsp cornstarch
1/2 tsp chili powder

Method:

1) Chop up chicken tenderloins. Get a bowl, mix all the ingredients together for BBQ Honey garlic sauce.

2) Carefully pour it over the chicken tenderloins. Mix it thoroughly. I like to prepare this step the night before and put in the fridge overnight.

3) The next day, fried marinated chicken tenderloins, set aside.

4) Fried onion, zucchini, peppers, mushrooms and bok choi. Set aside.

5) Pour in chicken or vegetable stock. Add rice. Bring it to boil and then simmer until rice is soft and cooked.

6) Add seasonal vegetables and marinated chicken tenderloins into the rice. Mix well.
