Fancy Tri-colour Rotini Pasta Salad with Bacon and Crushed Peas
I made pasta salad last weekend for our informal party. Everyone seems to like it and asks me for the recipe. So I thought it would be a good idea to share it with you in this forum too. This recipe is easy to make, perfect for making in advance and is easily customized.

Ingredients:

375g Tri colour Rotini pasta ( you can use elbow or spiral pasta if preferred)
500g green peas ( crushed)
1 cup of halved cherry tomatoes
500g bacon ( cooked and chopped)
2 Tbsp Italian seasonings

Pasta dressing

1/2 cup Olive oil
2 Tbsp lemon juice
2 Tbsp melted honey
2 Tbsp crushed garlic
2 Tbsp parmesan cheese (grated)
1 tsp Dijon mustard
Salt and pepper to taste

Method:

1) Cook pasta in boiling water. Take care not to overcook. Rinse it under cold water once finished cooking.

2) Cook and chop up bacon. Crush green peas. Cut up cherry tomatoes.

3) Get a large bowl. Gently mix all the ingredients together. Take care not to over mix.

4) Prepare the dressing and pour evenly over all ingredients. Gently mix it together.

5) Cover and refrigerate for at least 60 mins before serving.

6) On this occasion, I served the leftover pastas with cheesy bread. Yummy!
