Mini Pancakes
Mix: Whisk 1/3 cup flour, 1 ½ tsp sugar, 1 ¼ tsp baking powder, and a pinch of salt.
Wet: Stir in 1/4 cup milk, 1 egg yolk, 1 tbsp oil/butter, and 1/2 tsp vanilla.
Cook: Heat a greased pan on medium. Pour 2 tbsp of batter per pancake. Flip when bubbles form and edges look dry (about 2-3 minutes).

Boil egg on side
Add your favorite fruits and nuts on side
