Cherry Rocky Road

A family favourite that can be made with turkish delight bars if you don't like glace cherries:)
Ingredients ~
1 heaped cup of raw *unsalted peanuts.( Toast lightly in a dry frypan) no oil.
1/2 cup dessicated coconut ( also toast lightly in a dry pan)
350gm soft marshmallows ( l use pascall brand)
50gm chopped glace red cherries
15 Allen's ripe rasp lollies ( jellies for those in the U.S ! ) chopped.
Cool the peanuts off on a chopping board and lightly chop thru. Chop half the marshmallows as well then toss all ingredients into a large bowl.
* You can put aside a few chopped peanuts, a tsp of coconut, a few extra marshmallows ( sliced in half ) and chopped raspberry lollies for decoration later on.
THEN-
In a microwave 45 secs at a time I slowly melt
360 gm block Cadbury milk choc
180 gm block 70% baking choc ( l use plaistowe)
I tbsp copha
Pour over marshmallow mix, keeping a small spoonful left to drizzle over for decoration.
Stir lightly until mixed then straight into a standard size square cake tin. ( lined with baking paper)
* Tips.. make sure you push your mixture well into each corner with the back of your spoon or spatula and flatten through the middle before adding the whole lot!
Drop the cake tin as well, on the bench top to make sure it's nice and even . Then top with the leftover bits and sprinkles and chocolate drizzle . This cuts into 5 large bars which can be wrapped in cellophane bonbons for neat presents ;)
