Delicious Crumbed Beef olives with Roast potatoes and Bok choi

This is an easy Beef olives recipe, ideal for weeknight dinner. It does take a little bit of time to prepare the stuffing and roll it up, then crumb it! But once you have mastered it, it is a fairly fast recipe to cook and serve.

Ingredients:

500g beef tenderloin
500g sausage meat
1 medium onion (finely chopped)
2 tsp crushed garlic
1 tsp Italian seasonings
Dash of oil
Salt and pepper
Toothpicks
1/2 cup flour
1 egg
Dash of water
1/2 cup breadcrumbs

Method:

1) I use a tenderizer to flatten the beef tenderloin.

2) Add salt, pepper, onion, crushed garlic, sausage meat and Italian seasoning once beef tenderloin has been flattened.

3) Then carefully fold and roll it up. You might need to insert a toothpick to hold everything together.

4) Gather up 3 bowls. Put flour in bowl 1. Put egg wash in bowl 2. Put breadcrumbs in bowl 3. Roll beef olives in bowl 1, then bowl 2, then bowl 3. Repeat until all beef olives are rolled in breadcrumbs.

5) Slowly fry the beef olives in oil until both sides are brown. It takes about 15 20 mins all up. Careful not to burn the outside.

6) I then serve it with roast potatoes and seasonal greens (Bok Choi)
