Plum Bars

8 plums, cut into chunks
1/2 cup brown sugar
1tsp cinnamon
Crumble:
2 1/2 cups oats
1 1/4 cups flour
1 cup butter, cut into cubes
1 cup brown sugar
Prepare a baking pan with parchment paper.
In a saucepan over medium heat, combine the plums, brown sugar and cinnamon,
Cook until the plums are soft stirring occasionally. Remove from heat and let it cool.
In a food processor, add the oats, flour butter, and brown sugar. Pulse until the mixture resembles coarse crumbs and can be pressed together.
Preheat oven to 175°C
Press 3/4 of the oat crumble mixture firmly into the bottom of the prepared baking pan. Spread the plum evenly over oats. Sprinkle the remaining, oats over the plum layer. Bake for 25 minutes
