Soupy Spaghetti

This dish is a spaghetti bowl topped with spiced chicken, chickpeas, vegetables, and a fresh homemade sauce. Start by boiling your choice of noodles until tender, then set them aside. In a pan, saute thinly sliced chicken with turmeric, chili powder, cumin, salt, and a little oil until golden and slightly crispy. In another pan, lightly fry chickpeas, chicken minced sweet corn, chopped cabbage, and spring onions with a pinch of salt and pepper until warm soup. For the sauce, blend tomatoes, green chilies, cilantro, garlic, a splash of lemon juice, and a little salt into a smooth, tangy mixture. To assemble, place the noodles in a bowl, spoon the chickpea vegetable mix on top, add the cooked chicken on the side, and finish with herb sauce and extra chopped cilantro or spring onions.
